Why are 7.2mm wheels used? Because they are available? The own exchange to 7.0mm RP25 is done quickly.

7mm is close to a scale 33" wheel set so would be the right size to use.

My eyeballs are not calibrated to 10ths of a millimeter!!!
I can usually spot the difference between 36in and 33in wheels...
but not 34in (7.2mm) and 33in (7.0) mm.
AFAIK... These are the same wheels used on MTB tank and 3-bay hopper cars. (With few or no complaints...)

I find the chosen diameter a bit unusual, but nothing more. The 7.2mm are not common in the TT scale, not even on the European rolling stock.
I prefer RP25 anyway, so it almost doesn't matter with which wheelsets the wagons are delivered.
Now upon closer inspection of the pictures, something catches my eye: These are MTB trucks under the 2-bay Hopper. That's probably why these axles were chosen.

The height of the car is one of the reject criteria. But I have to give production some small slack plus/minus 0,2mm is not noticable. And to be honest, also MTB had a variance in height, which was depending on when the hopper was produced and if the wheels were round.

To make it comparable, this car had the same diameter as the wheels from the MTB 3-bay hopper. Now if I put 7,0mm wheels under it, this car will be 0,1mm lower compared to the MTB hopper. Fischer uses RP25 wheels and no they are not the same as the MTB ones. At least they are round and do not rust that quickly.

Perhaps an idea how they will look like.
Understand that we have on some models a fine and small writing only doable with pad printing.

A comparison with the MTB 3-bay Hopper is good. But the 2-bay does not have to have the same height. Unless the plans of both say so. According to the prototype, they roll on different trucks, and I don't see that here.
Regarding paint schemes, you made a fine choice. There is also something for me. The Delaware & Hudson is missing a "D" and "H".

Absolutely correct. But a glance at the wheel flange probably is.

Perhaps another question to everyone. Is the Kadee 705 a good choice for new cars? (As mentioned before, due to the lack of room a coupling to the hopper has to be glued and because we don't do that, the hopper will be delivered without coupling.)

The 705 is a little smaller than the 714, but for me still not a suitable coupler for TT. I will stay with Micro-Trains Line N-scale. Maybe one day I'll use the 705 for a locomotive because it looks better.
