The Possum Valley Models coupler gauge is a must if you are wanting to convert your fleet to Kadee 713/714 type couplers.
The gauge itself is a sold chunk of resin that has a pocket for mounting a Kadee 713/714 coupler in, and it mounts in with a screw.

The gauge itself has a pair of runners that act like flanges for gauging coupler height. The car to be gauged is put on the track and coupled to the gauge, and the height of the coupler on the car to be gauged can be adjusted by either removing material, or by adding shims as needed.

Also, the pointed end of the gauge can be used to gauge the bottom of a car to see if it is of the right height for NMRA standard coupler height.

Once again, height can be adjusted via removing material, or by adding shims.
