What thickness clear plastic should I use around the outside (to keep fingers off)?

Whatever you can get fast and cheap. 1/8" minimum. 1/4" may be less expensive.

Also some highly visible: "Please Do Not Touch" signs will help.

Be vigilant, as vigilant as you can while talking to everybody.
Be prepared for the possibility of an item walking away so don't put anything irreplaceable up front.
Sad but true, sticky fingers do exist in the MR world and the uniqueness of TT-Scale may bring them out.

You'll talk a lot so have water on hand.
Wash your hands a lot - hourly if you can, or keep baby-wipes around to clean your hands. Helps to cut down the chances of a post show bug.

I agree that "Please Do Not Touch" signs are a good idea, but they sometimes invite problems.

At the first model train show where I displayed TT trains in Greenwich, CT some years ago, I had a few "Do Not Touch" signs near the Marx O-27 2-4-2 #666 that I had restored and with my large scale (8.75" gauge) 4-4-0, and there were a few jerks who took the signs as a challenge, damn near causing the large scale 4-4-0 to crash onto the floor.

We are going to use a combination of barrier ropes and sheet plastic to protect the stuff on display.

That's a lot of work done in a short time. Way to go!

Looking at the photos, an image came to mind of the Richard Dreyfuss character in Close Encounters of the Third Kind, going a little over the edge, creating and shaping a model of Devil's Tower in his living room.
