Are there any Slavs here? Hungarians may join also... :)

My wife arrived from her trip to Ukraine yesterday.
Now we have something for dinner...

For those of you who never visited Slavic countries: it is SALO, our national dish - pure concentrated cholesterol.

It's basically salted fat right?

Of course!
Salted, and/or maybe sometimes smoked. May be peppered also.

It's interesting that in fact salo (fat) decreases the level of cholesterol in the organism...

Well, I like it only when it's cut into cubes and boiled down, so all the fat becomes oil. The crunchy left over parts are absolutely delicious with some salt, tomatoes and green onions!

BOIL down? Do you mean put it into the boiling water?

They are to be fried, roasted on the pan. Then we will get the SHKVARKI (cracklings).
They are good with the potatoes.
Or put them on the pan with the tomatoes and then put some eggs. Fried eggs with the tomatoes and shkvarki are delicious !

No, not in water.

Just put the cubes into the pot and let it go until it's all melted down - yes, Shkvarki, töpörtyű in Hungarian. When it's nearly done, it's basically just boiling oil, plus the cracklings in it...

You make my mouth water.

At the moment that's absolutely not good.
