My wife (from Budapest) prefers "sült zsír"...
i.e. seasoned roasted lard... spread over fresh Hungarian bread...
with some green peppers on the side.

YUM...

and... it keeps the bread from drying-out while you work on the trains!

Mmmm... salo! We have a few varieties on sale in our local Russian deli, but I have not had it in ages. I'll have to research the cholesterol-lowering claim, maybe my wife will let me have some!

Why do you care about cholesterol?
The human body produces its own cholesterol. If there's high cholesterol in food, it produces few cholesterol. If there's low cholesterol in food, it produces much cholesterol.
So you can not influence your cholesterol level by your food. That's a fairytale invented by advertising industry. :snooty:
They only want to get your money... :x

If your cholesterol level is not okay, it will have other reasons, but not your food.

Because I've had very high cholesterol for many years (started off with the shock of 305 cholesterol level - mostly the bad stuff - about 7 years ago).

I don't want to take pills so I've been eating certain things and not others. It DOES make a difference. Many things do, but food is one of them.

My doctor doesn't even bother trying to prescribe me pills anymore because he knows I won't take them. If he tells me my cholesterol is too high I change my diet and it comes back down.

I bet, your diet doesn't care about the cholesterol in your food. It rather cares about the hormones controlling your body's own cholesterol production.
Doesn't it?

Agreed.
Concerning salo - if you eat 20 grams of salo per day, your organism produces less cholesterol, so the total cholesterol level decreases. Of course it is not a good idea to eat a kilogram or two.
